Qualities of a cellar
A cellar must have a very strong inertia,
                                                 be comfortable in winter and fresh in summer,
                                                 with always a very high humidity ratio in order to reduce the evaporation.

Yesterday :
Our ancients had some cellars where the temperatures were nearly constant, quite cold in winter,but always fresh in summer. These cellars were naturally humid because there were always a few water infiltrations and none ventilation. The result is none consumption of energy or only limited to a few candles.

Today :
We build some buildings with some logistic and esthetical problems; ones are realised by prestigious architects, others are some simple sheds, but all are air-conditioned with a bill of energy that increase again and again.
And especially, the evaporation, the draughts, the air-conditioning failures, the cold snaps, the hot snaps, prevent the wine maturity easily.

The angels’ share
Angels’ share is the part of alcohol that evaporates from the casks in the cellars.

The origin of this expression would be the alchemy which called “angels”, the volatile matter.

Angels’ share is the wine spirit : wine body that is volatilised, spiritualised. Metonymical or metaphorical process, or both at one and the same time.

More prosaically, today, angels’ share was multiplied by 10 because of air-conditioning and excessive ventilation that increase the natural evaporation, “angels’ share” of a cellar.


Angels are drunk and wine growers are transformed into hellishly bad laboratory assistants.

KaRo Technology
The mat
The most important piece of KaRo system is the mat with some capillary tubs. This mat is formed from a grid with some supple tubs (small diameter 2,5 mm inside) and supply collectors.
The small thickness of KaRo mat allows a fitting into directly the surface of the walls, ceilings and floors.
 
Simplicity

The important consequence is there is only a very small difference between the average temperature of the ceiling and its lower temperature of circulation water. So we transform passive building elements by heating and coolness surfaces.
 
Durability

KaRo mats of range P are made in polypropylene – Random – Copolymerisat. Polypropylene proved itself for decades in the soil heating and the supply of drinking water.
A 10-years guarantee of this system is given by the maker.

 
Experience

Water is the fluid that evacuates the heat ; the mats are flexible, modular and used for 25 years in service industries, housing and this system has a technical notification.

 
 
Aesthetic

Walls temperature at 15 °C in summer is enough in order to maintain the cellar temperature at 16°C. The thermal engineering of old cellars is created again by the mats which keep the walls at the same temperature for the whole year.

 
Save energy

Mats are simply integrated into the vault and walls after an efficient isolation, and are used as a support for a plaster of lime or a roughcast of cement and lime.
